You want simple, right? You want healthy, yes? (especially this time of year when at every turn fudge, cookies, and pies seem to appear like magic). Then you must make this for dinner. Tonight. And you might just have a lot of these ingredients on hand! No grocery store trip during Christmas mayhem = win!!!
Ingredients:
1 can tuna
1/2 red bell pepper – chopped
2 green peppers
1/4 yellow onion – chopped
handful spinach
1 tbsp kidney beans
feta crumbs (to taste)
salt and peppa (to taste)
squirt of lemon juice
1. Turn broiler on high.
2. Cut 2 green peppers in half. Discard seeds.
3. Mix above ingredients.
4. Divide mixture into peppers.
5. Broil for 5 mins or until feta begins to brown.
6. Let cool ~3 mins and serve!
